Steered Straight Thrift

Sweet Potato Biscuits

¾ cup milk
¾ cup sweet potatoes, boiled and mashed (can be canned)
2 tablespoons sugar
4 tablespoons baking powder
4 tablespoons butter or margarine, melted
1 ½ cups all-purpose flour
½ teaspoon salt
Pinch baking soda

Assemble all ingredients and utensils.

Mix milk, potatoes, and shortening. Mix together flour, sugar, baking powder, salt, and soda. Mix all together and turn onto a floured board and knead for 30 seconds. Roll ½ inch think and cut with biscuit cutter. Bake in a 425 degree oven for 12 to 15 minutes. Can use heart-shaped cookie cutter for fancy biscuits for tea or luncheon.

Variation: Add plumped raisins to mixture for additional flavor.

Yields: 1 dozen
