Kentucky Butter Cake (with Sauce)

Kentucky Butter Cake

3 cups cake flour, sifted

1 teaspoon baking powder

1 teaspoon salt

½ teaspoon baking soda

1 cup butter

2 cups sugar

4 eggs, unbeaten

1 cup buttermilk

2 teaspoons rum flavoring

Sauce (see below)

Preheat the oven to 325 degrees. Into a mixing bowl, sift together the flour, baking powder, salt, and soda. In a separate bowl, mix the butter and sugar until soft. Blend in the unbeaten eggs one at a time, beating well after each addition. In another bowl, combine the buttermilk and rum flavoring and add to the butter mixture alternately with the dry ingredients, blending well after each addition. Turn into a tube pan. Bake for 1 hour to 1 hour and fifteen minutes. Prick with a fork. Pour hot sauce over the cake. Cool before removing from the pan.

Yield: 16 servings

Sauce for Kentucky Butter Cake

1 cup sugar
¼ cup water
½  cup butter
2 tablespoons rum flavoring

In a saucepan heat the sugar, water, and butter until melted. Add 2 tablespoons rum flavoring. Pour over hot Kentucky Butter Cake.
