Miss Daisy King’s Veal Parmesan

1 pound veal leg round steak
1/2 cup chopped onion
1 clove garlic, minced
1/4 cup chopped green bell pepper
1 tablespoon olive oil
2 tablespoons freshly grated Parmesean cheese
1 cup tomato sauce
1 tablespoon dry red or white wine
2 ounces freshly shredded part-skim mozzarella cheese

Assemble all ingredients and utensils. Cut the veal into 6 3-ounce pieces. Pound each piece to 1/4-inch thickness. In a large skillet cook the onion, garlic, and green pepper in oil until tender. Push the mixture to one side of the skillet; add the veal and brown on both sides.

In a small bowl combine the Parmesean cheese, tomato sauce, and wine. Pour the mixture over the meat. Cover and cook over low heat for 20 to 25 minutes or until the meat is tender.

Sprinkle the mozzarella cheese over the meat and sauce. Cover and heat for 5 minutes or until the cheese is melted. Yields 6 servings of 3 ounces each.
