Microwave Coffee Mug Spice Cakes

Makes 8 coffee mug cakes

These individual coffee cake mugs are intended to be prepared as dry ingredients in a mug and given as gifts.

Cake Mix
1 spice cake mix, any brand
1 (4 oz.) instant pudding mix (not sugar-free; any flavor, pumpkin spice, vanilla, etc.)

Mix together cake and pudding mixes.
Separate into eight plastic zipped baggies (approximately ½ cup plus 1 Tbsp.).

Label “Cake Mix.”

Glaze Mix
Create 8 separate baggies that contain the following each: 1/3 c. powdered sugar 2 tsp. dried coffee flavoring powder (Coffeemate French Vanilla, Hazelnut or Gingerbread. I prefer Cinnamon Vanilla. Select a flavoring appropriate to the cake you are making and be creative).

Label each baggie “Glaze”.

Select one of eight large, microwave-safe coffee cups that hold at least 2 cups of water.

Place one baggie of cake mix and one baggie of glaze mix in each cup.

Write or print the following instructions on a pretty recipe card and attach the instructions to the mug with a ribbon.

Instructions:
Generously spray inside of coffee cup with cooking spray.

Empty contents of cake mix baggie into cup.

Add 1 egg white, 1 Tbsp. oil, and 1 Tbsp. water to dry mix. Mix with fork for 15 seconds, carefully mixing in all the dry mix.

Microwave on full power for 2 minutes (or longer if your microwave is low-wattage).

While cake is cooking, place ingredients from Glaze baggie into a small container and add 1½ to 2 tsp. water. Mix well.

When cake is done, pour glaze over the cake.

Enjoy while warm.
