Smyrna Depot Farmers Market Recipe of the Month:
Sugar Cookie Peach Cobbler

Ingredients
5 Cups Fresh or Frozen Peaches
1/4 Cup White Sugar
1/4 tsp. Ground Cinnamon
2 Tbsp. Vanilla
4 Tbsp. Cornstarch
1 16.5 oz. Refrigerator Sugar Cookie Dough
1 Stick of Butter
1/4 Cup Light Brown Sugar
Directions
Preheat oven to 350 degrees F. Spray 8-inch square baking dish with cooking spray.
In a large bowl, combine peaches, white sugar, cinnamon and vanilla. Stir until nicely mixed.
Make the brown butter by melting the stick of butter in a small saucepan over medium heat, stirring occasionally. This may take 5 to 10 minutes. When butter turns a brown color on the bottom of the pan, turn off heat and add brown sugar. Stir until combined, but the sugar is not completely melted.
Pour butter mixture over peaches, add cornstarch, and stir until fully coated. Then pour peaches and sauce into baking dish.
Cut sugar cookie dough into ¼-inch slices and place on top of peaches. Sprinkle with about ¼ tsp. sugar and bake for 35–40 minutes, or until golden brown. Serve warm or chilled.
Notes:
If using frozen peaches, make sure you thaw them first!
When using a 13-by-9 inch baking dish, double the amount of ingredients, except you will only need 1½ tubes of refrigerator sugar cookie dough.
