1 hard-boiled egg
¼ cup red or white wine vinegar
½ teaspoon chopped chives
¾ cup oil (1/2 olive, ¼ corn)
1 tablespoon capers
¼ teaspoon dry mustard
1 tablespoon lemon juice
¼ teaspoon salt
6-8 heads Bibb lettuce
Cracked pepper
Assemble ingredients and utensils. Chop egg finely. Combine all ingredients, except lettuce, in a jar and shake well. Wash and tear lettuce. Dry thoroughly and crisp in the refrigerator. Pour dressing over lettuce just before serving. Can refrigerate dressing for months.
