2 large tomatoes, star cut and halved
16 ounces large curd cottage cheese
1 bunch green onions, diced (save 4 strips for garnish)
3 ounces bacon bits, chopped
4 ounces mayonnaise
2 bacon strips, cooked
salt, pepper, and Old Bay seasoning to taste
Assemble ingredients and utensils. Star cut and half two tomatoes, scoop out halves. Dice inside of tomatoes and save. Squeeze cottage cheese nearly dry. Put into a bowl; add onions, bacon bits, mayonnaise, and seasonings. Mix well. Scoop into tomato halves. Garnish with bacon and green onions.
